Healthy Fettuccine Alfredo

Cottage cheese is the key to this healthy, creamy fettuccine alfredo.
  • 1 tablespoon butter, ghee or olive oil
  • 1 garlic clove, minced
  • 1 cup 2% cottage cheese
  • ¼ cup grated Parmesan cheese
  • ¼ cup milk
  • 1 egg
  • ¼ teaspoon dry mustard
  • ¼ teaspoon nutmeg
  • ¼ cup chopped fresh basil or 1 tablespoon dry
  • ¼ teaspoon salt
  • freshly ground black pepper to taste
  • 8 ounces fettuccine
  1. Bring a large pot of salted water to a boil and cook pasta according to package directions.
  2. While pasta cooks, combine cottage cheese, Parmesan cheese, milk, egg, dry mustard, nutmeg and salt in the bowl of the food processor or blender. Process until very smooth. Set aside.
  3. In a large sauté pan, heat butter over medium heat, add garlic and sauté for 2 minute. Add the cottage cheese mixture to the pan and continue to cook for two to three minutes until the egg cooks and the sauce thickens slightly.
  4. Add basil and cooked pasta to the sauce, stir to coat and sprinkle liberally with fresh cracked black pepper. Serve immediately.
