Vegan Eggnog

Serves: 5 servings
- 3 cups unsweetened almond milk
- 1 cube (14 oz.) firm silken tofu
- ½ cup sugar
- 4 tsp vanilla
- 1 heaping tsp cinnamon
- 1 tsp nutmeg
- ¼ tsp allspice
- ¼ tsp ground ginger
- ¼ cup brandy, bourbon or rum
- Combine all ingredients in a blender and blend for 1 minute. Pour mixture into a saucepan and warm over medium heat. Do not boil
- Serve with a dusting of cinnamon or nutmeg.
If you like your eggnog served cold - add 8 ice cubes to the blender and whip until frothy.
