Red Beans and Rice

A crowd-pleasing, versatile Southern favorite.
Ingredients
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 ribs celery, chopped
  • 1 green bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 - 15 ounce cans red beans, rinsed and drained
  • 3 cups chicken or vegetable stock
  • 2 bay leaves
  • 1 ½ cup brown rice
  • Hot sauce (optional)
Instructions
  1. In a large pan, sauté onions, celery, green pepper and garlic in oil until tender.
  2. Add Cajun seasoning, thyme, salt and pepper.
  3. Sauté for an additional five minutes.
  4. Add red beans, stock and bay leaves.
  5. Bring to a low boil; reduce heat and simmer, uncovered for 1½ hours. Stir occasionally.
  6. While the beans cook, prepare the rice per package instructions.
  7. Remove the bay leaves and serve the rice with an equal amount of beans.
  8. Douse with hot sauce and enjoy!
