Homemade Sriracha Sauce

Serves: 2 cups
- 15 red jalapeƱo OR Fresno peppers, stems and membranes removed, 1 tablespoon of seeds reserved (optional if you like spicier sriracha sauce).
- 8 garlic cloves, peeled
- ½ cup sugar
- 1 teaspoons salt
- ½ cup vinegar
- 1 cup water
- Combine all ingredients in a blender until smooth (about 60-90 seconds). This will yield approximately 3 cups of liquid.
- Transfer mixture to small saucepan. Bring to a boil, then reduce heat to medium-low.
- Stir occasionally, skimming the foam that forms on top of the liquid. Adjust salt as needed.
- Simmer until mixture has thickened, about 30-40 minutes.
- Remove from heat and let cool completely. Transfer to jar, tupperware, or plastic squeeze bottle and seal tightly.
- Refrigerate for a minimum of 24 hours before using.
