Homemade Sriracha Sauce

Ingredients
  • 15 red jalapeƱo OR Fresno peppers, stems and membranes removed, 1 tablespoon of seeds reserved (optional if you like spicier sriracha sauce).
  • 8 garlic cloves, peeled
  • ½ cup sugar
  • 1 teaspoons salt
  • ½ cup vinegar
  • 1 cup water
Instructions
  1. Combine all ingredients in a blender until smooth (about 60-90 seconds). This will yield approximately 3 cups of liquid.
  2. Transfer mixture to small saucepan. Bring to a boil, then reduce heat to medium-low.
  3. Stir occasionally, skimming the foam that forms on top of the liquid. Adjust salt as needed.
  4. Simmer until mixture has thickened, about 30-40 minutes.
  5. Remove from heat and let cool completely. Transfer to jar, tupperware, or plastic squeeze bottle and seal tightly.
  6. Refrigerate for a minimum of 24 hours before using.
