Fried Cauliflower Rice

  • 1 pound fresh cauliflower florets
  • 2 tablespoons oil (I use peanut oil)
  • Mrs. Dash Garlic Blend (or other seasoning mix)
  1. Chop or process the cauliflower into tiny, rice-sized pieces.
  2. Cook, covered in a microwave with about a cup of water until fork tender. Drain well.
  3. Heat the oil in a large pan over medium heat. Add the riced cauliflower and seasoning, stirring occasionally until the cauliflower is golden, about 8-15 minutes.
  4. Pat yourself on the back. You've got this.
