Easy Grain-Free Bread

Ingredients
  • 1 cup creamy cashew butter, room temperature
  • 5 large eggs
  • 1 tablespoon apple cider vinegar
  • 2 teaspoons butter or ghee
  • ¾ teaspoon baking soda
  • ¼ teaspoon fine sea salt
Instructions
  1. Preheat oven to 350.
  2. Prepare an 8½ x 4½ x 2½ loaf pan with coconut oil or butter and line with parchment paper.
  3. Place cashew butter in the bowl of a food processor, add eggs and mix well.
  4. Add vinegar, butter or ghee and pulse to incorporate.
  5. Add baking soda and sea salt and pulse.
  6. Transfer batter to prepared pan.
  7. Bake for 40 to 45 minutes until tester comes out clean.
  8. Cool bread in pan for 15 minutes and then transfer to a cooling rack for one hour.
  9. Wrap bread tightly in plastic wrap and store in the refrigerator for two weeks or freeze.
