A little sweet and full of veggie protein, these sweet potato black bean burgers may have been invented out of necessity, but they're sticking around because of their deliciousness!
Ingredients
1⁄2 can black beans, rinsed and drained
1 cup sweet potato, baked (or mashable)
1⁄3 can Southwest corn
1⁄2 onion, diced fine
1 cup bread crumbs
1 egg
Salt + pepper to taste
4 buns
Toppings (your choice!)
Instructions
In a medium bowl, coarsely mash black beans. Add sweet potato and mash into black beans.
Add corn, onion, bread crumbs and egg. Mix thoroughly.
Form four patties. Use 1⁄2-cup measuring cup to guide.
Cook about five minutes on both sides, until evenly browned. Assemble as desired.
