This African Chicken Peanut Soup is rich, filling and has a great sweet-and-salty flavor. Try it over brown rice or cauliflower rice for dinner tonight.
Ingredients
  • 2 pounds boneless skinless chicken thighs
  • 1 white onion coarsely chopped
  • 1 red or yellow bell pepper coarsely chopped
  • 2 large sweet potatoes coarsely chopped
  • 1 can black beans (undrained)
  • 2 teaspoons garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • ½ cup creamy peanut butter
  • 1 quart chicken broth
  • 2 cups chopped kale
  • salt and pepper to taste
  • Brown rice or cauliflower rice, optional
Instructions
  1. Place ingredients (OTHER THAN kale, salt and pepper, and rice/cauliflower rice) listed above in a slow cooker. Follow the order listed so that your chicken is on the very bottom.
  2. Turn slow cooker on high for 6 hours.
  3. After 6 hours, stir, breaking up and shredding the chicken thighs (you can do this with a spoon or fork --- it should easily break apart). Then, add kale and add any necessary salt or pepper and cook on low for 1-2 more hours.
  4. Serve in bowls as is, or serve over brown rice or cauliflower rice.
