Gluten-Free Eggnog Pancakes

This gluten-free pancake recipe is sure to become a holiday favorite in your home!
Ingredients
  • 1.25 cups almond flour/meal
  • ½ cup eggnog
  • 2 eggs
  • 1 tablespoon brown sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • Pinch of salt
Instructions
  1. Combine all ingredients in a large mixing bowl.
  2. Heat pan (or griddle) over medium heat and coat with non-stick cooking spray.
  3. Use a ¼ cup to portion batter onto the pan/griddle.
  4. Cook each pancake for 2-3 minutes and then flip. Cook on the other side for about 1 minute.
  5. Serve with your favorite toppings.
