Chicken Chipotle Soup

Ingredients
  • 4 tablespoon olive oil
  • 1 cup broccoli stems, diced
  • ½ cup carrot, diced
  • 1 white onion, diced
  • ½ cup celery, diced
  • 1 tablespoon thyme, finely crumbled
  • 1 tablespoon oregano, finely chopped
  • 1 tablespoon parsley, finely chopped
  • 1 tablespoon chipotle seasoning
  • 4 ½ cups chicken broth
  • 2 cups broccoli florets, diced
  • 1 can black beans (16 oz.)
  • 1 pound chicken grilled chicken, cubed
  • 1 tablespoon Worcestershire sauce
  • hot sauce, to taste
  • 2 cups buttermilk
  • salt and pepper, to taste
Instructions
  1. Heat a medium sauce pan over medium heat, then add the olive oil. Add broccoli stems, carrots, onion and celery. Sauté until onions start to become translucent.
  2. Stir in spices and sauté until you can smell the spices.
  3. Add chicken broth and bring to a boil. Let cook for 10 minutes, stirring occasionally.
  4. Add broccoli florets, beans, grilled chicken, Worcestershire sauce and hot sauce and simmer for 5 minutes, stirring occasionally.
  5. Add buttermilk and simmer 5 more minutes.
  6. Salt and pepper (and add additional hot sauce, if desired) to taste.
