Chicken Kebab

Get ready for an epic tailgate with this kebab recipe! Be sure to check the notes for ideas to adapt it to accommodate a wider variety of diets.
Ingredients
  • 2 lbs. boneless, skinless chicken breasts cut into 1” pieces
  • 2½ tablespoons Stubb’s Bar-B-Q Rub
  • 2 red bell peppers, cut into large chunks
  • 1 cup Stubb’s Original Bar-B-Q Sauce
  • 8 wooden skewers (soak in water for 1-2 hours)
Instructions
  1. In a large bowl, toss the chicken and Bar-B-Q Rub together. Cover with plastic wrap and let it rest in the fridge for 30 min to 1 hour.
  2. Alternate pieces of chicken and red bell pepper on the skewers.
  3. Grill over direct heat for 7-8 minutes or until chicken is cooked through. Turn every 2 to 2 ½ minutes to prevent burning.
  4. Baste with Stubb’s Original Bar-B-Q Sauce and use a covered grill to ensure a smoky flavor.
Notes
Add green or yellow peppers, onions, tofu cubes, pineapple, shrimp, or any other grill-able foods you or your guests might enjoy to the mix. Just be sure to increase the amount of sauce or rub you use as needed, and grab more skewers.
Then, you can either grill the chicken separately or let people literally build their own kebab by putting the ingredients they desire on their own skewers.
