Erin's Fave Holiday Recipe: Banana Nut Bread

Ingredients
  • 1½ cups sugar
  • ¼ teaspoon salt
  • 1 teaspoon baking soda
  • ½ cup butter
  • 2 eggs
  • 4 to 5 bananas, pureed
  • 2 cups flour
  • ½ to 1 cup nuts
  • 1½ teaspoon vanilla
Instructions
  1. Preheat oven to 325 - 350.
  2. Combine first four ingredients.
  3. Puree bananas in a blender or food processor; add to first four ingredients.
  4. Add eggs.
  5. Add remaining ingredients and stir until mixed.
  6. Pour into two 8-inch loaf pans. Bake for 1 hour to 1.5 hours.
