Fruity Bruschetta Recipe

Delicious as an appetizer or even as a dessert, liven up your next gathering with this Fruity Bruschetta recipe, reprinted with permission from Hungry Girl.
Ingredients
  • 1 mango, diced
  • 1 small banana, diced
  • ½ c strawberries, diced
  • 1 French baguette about 2 inches in thickness and at least 6 inches long
  • 2 tbsp light whipped butter or light buttery spread
  • ½ tsp cinnamon
  • 2 no-calorie sweetener packets
  • ⅓ c fat-free fruit-flavored yogurt (your choice)
Instructions
  1. Preheat broiler.
  2. Stir all fruit together in a bowl. Cover and refrigerate.
  3. Using a sharp serrated knife, carefully cut sixteen ¼-inch-thick slices from the baguette. (Save any remaining bread for another use.) Lay bread slices in a single layer on a large baking sheet.
  4. Add the cinnamon and sweetener and mix well. Brush the tops of the bread slices with butter mixture.
  5. Place the baking sheet about 5 inches beneath the broiler and let broil for 3 minutes, or until tops are slightly bubbly.
  6. Evenly distribute chilled fruit among the bread slices. Top each with a teaspoon of yogurt.
  7. Enjoy!!! Take one for yourself and share the rest with seven of your closest friends!
