We got this beans and rice recipe from Elior North America’s VP of Culinary Development Chef Paul Basciano. He’s been sharing some easy-to-make minimal ingredient recipes for all of us who are sheltering in place, and this is one of those recipes that’s just perfect. It’s made with stuff you probably already have in your pantry, and the recipe itself is flexible enough so that you can use whatever seasoning or specific beans/rice you have on hand.

Ingredients
2 1/4cupwater
1cuprice
1onion
2teaspoonsseasoning (sazon, adobo, etc.)
1/2teaspoonminced garlic
1/2teaspoonblack pepper
1canbeans
1small canolives (ideally green)
Instructions
Combine water, rice, and olive oil in a pot and bring to a boil. Mix in onion, seasoning, and black pepper.
Reduce heat to low and continue cooking for 10 to 12 minutes.
Add beans and olives, and continue cooking until liquid is absorbed — about 10 minutes.
