Goat Cheese Crostini Appetizer with Kalamata Olives, Citrus and Thyme
Does entertaining stress you out? Or do you always blank about what to take to share at a party that’ll please everyone but still be fresh and healthy? Well, when Erin shared this Goat Cheese Crostini Appetizer recipe over on Fit Bottomed Mamas from Mindy Kobrin of Meals on Heels a few weeks ago, I knew it was a must-share in these here foodie parts. It’s definitely more of a ta-da than cheese and crackers, takes just 15 minutes to prepare and is full of all kinds of yummy — and heart-healthy — Mediterranean flavors. The recipe below serves four, but feel free to double or triple as needed!
Goat Cheese Crostini Appetizer with Kalamata Olives, Citrus and Thyme Recipe
Ingredients
1/2 cup Kalamata olives
3 sprigs of fresh thyme
3 tablespoons extra virgin olive oil
1 lemon, zested
1 tablespoon orange zest
1/4 teaspoon ground pepper
1 5-ounce fresh goat cheese medallion
Directions
1. Heat olives, fresh thyme, oil and citrus zests in a small skillet over medium-high heat until aromas are released. Remove from heat and cool to room temperature.
2. Pour olive mixture over goat cheese medallion in a small serving bowl. Serve immediately with crostini and crudités (or cucumber slices if you’re gluten-free).
