Tropical Cruciferous Crunch Salad and Tilapia Ceviche
Ready to eat your veggies? Today, for Guest Bloggers’ Week, reader Anna — a 29-year-old holding it down FBG style in Houston, Texas — is sharing her Tropical Crunch Salad and Tilapia Ceviche recipe that she recently made for dinner and loved. Anna loves getting creative in the kitchen with cooking and baking, and her husband acts as her loving, but somewhat skeptical, guinea pig. But with this dinner combination, she hit it out of the park!
I made this dinner for three reasons:
1. To beat the heat in Houston.
2. To celebrate my love of Trader Joe’s (something we have in common!).
3. For you guys!
- 1 avocado
- Juice of three limes
- 1 tablespoon rice vinegar
- 2 tablespooons maple syrup
- dash salt
- dash cumin
- 1 bag Trader Joe's Cruciferous Crunch
- ½ cup diced fresh pineapple
- ¼ cup Trader Joe's Coconut Chips
- Hot sauce to taste
- Mash 1 avocado and mix with lime juice, rice vinegar, maple syrup, salt and cumin.
- Pour over a bag's worth of Cruciferous Crunch and massage it in. Chill for 30 min. Top with diced pineapple, coconut chips and as much hot sauce as you want.
Tilapia Ceviche Recipe
The ceviche was basic lime juice, onion, tomato, cilantro and jalapeño with tilapia. You just let the lime juice sit on the tilapia for 30 minutes, drain and add the rest of the ingredients. Eat this tilapia ceviche with some tortilla chips and you are good to go!
