Double Chocolate Love Cake Recipe

Last year, I convinced myself I could make a train cake for my son’s birthday. This year I wanted to go the easier route, so when he requested cupcakes, I mentally high-fived myself. I can do cupcakes! Unfortunately, the little guy got sick later that evening (unrelated to the cupcakes, I’m sure), and now he’s convinced that cupcakes and ice cream make him sick and wants nothing to do with either. (Why can’t that happen to me?) Anyway, I wish I had seen this cake recipe from Linwoods Health Foods for chocolate cake before his birthday because it looks delicious, has lots of chocolate and looks easy enough that I might be able to make it without totally messing it up. Plus, it has a secret healthy ingredient.

Double Chocolate Love Cake

1⅓ cups flour 1 Teaspoon baking powder ½ cup Cocoa powder 2 tablespoons of Linwoods Ground Flaxseed Cocoa Strawberries & Blueberries blend 90 g chocolate 1⅓ cups butter 1⅔ cups sugar 7 eggs ⅓ cup Chocolate Chips
Ingredients
  • 1⅓ cups flour
  • 1 teaspoon baking powder
  • ½ cup cocoa powder
  • 2 tablespoons of Linwoods Ground Flaxseed Cocoa Strawberries & Blueberries blend
  • 90 g chocolate
  • 1⅓ cups butter
  • 1⅔ cups sugar
  • 7 eggs
  • ⅓ cup chocolate chips
  • Filling:
  • 2 tablespoons of Linwoods Ground Flaxseed Cocoa Strawberries & Blueberries
  • 1⅓ cups unsalted butter
  • 1 jar of cream cheese icing
Instructions
  1. Line 2 cake tins with greaseproof paper and preheat oven to 375 F.
  2. Sieve the flour, baking powder and cocoa together into a mixing bowl.
  3. Melt the chocolate and mix with the butter and sugar.
  4. Beat the eggs and add to the chocolate mixture.
  5. Fold in the flour mixture, Ground Flaxseed Cocoa Strawberries & Blueberries and chocolate chips.
  6. Divide the mixture between the two cake tins and bake for 25 minutes
  7. Leave to cool and place on a cooling rack.
  8. For the filling, beat the butter, icing and Ground Flaxseed Cocoa Strawberries & Blueberries together.
  9. Sandwich the two cakes together with a layer of the filling and then cover the top of the cake with the filling to decorate.
