Cooking Made Simple With cooksimple Meals — Really!

I’ve never loved cooking. Sure, I could blame my mother because we are so alike, and she doesn’t love cooking either; but I can dig deep and break it down into the exact reasons why I don’t like to cook. It’s not the actual cooking part — it’s that cooking starts at the grocery store (hate) and ends with dishes to be cleaned (hate). The actual cooking part is okay; although I lack the creativity needed to ever be a master chef, I can follow a recipe and come up with good eats. And the eating part, well, love it!

When it was just my husband and me, I was always trying out new recipes, and I did a fair amount of cooking. Now that kids are involved, I feel added pressure in the kitchen. I find that I always feel like I’m on an episode of a reality cooking show: My time is running out, people are screaming at me that they’re hungry, and I finally slap something, anything, on the table to please them. It doesn’t matter how early I start cooking. Just like they can be totally occupied when I’m working out and then want to come play as soon as I’m in plank position, the moment I start cooking is the moment they decide that THEY ARE STARVING. Then, no matter how tasty it is, at least some of it gets thrown on the ground by a toddler. Meals that I can get on the table quickly are a godsend. Meals that don’t require thinking and that can be cooked while people are hollering about their grumbling bellies? Heavenly.
