Stuffed Zucchini Boat Recipe Variations
1. Vegetarian: Substitute 1-pound Portabella mushrooms and 1 cup of frozen spinach that has been squeezed dry for the meat. Mix in 1 cup of cooked brown rice at the end.
2. Italian: Top sweet or spicy Italian sausage stuffing with a slice of provolone. Add chopped mushrooms and a dash of red chili flakes to the onion and peppers.
3. Some Like It Hot: Any peppers will work. Try jalapenos with ground pork and pepper jack cheese for a lively meal.
4. Fish: A couple of cans of tuna or white fish work just as well as meat. Cook fish until no longer translucent, substitute a little mayo for the egg and top with feta cheese and chopped tomato.
5. Calorie Cruncher: Use ground turkey breast, add a grated carrot or two with the onion and pepper and cut back on the cheese. Instead sprinkle on a combination of grated Romano and/or Panko crumbs for the last five minutes of baking.
