Six-Way Stuffed Zucchini Boats


It’s good idea to have a recipe in your arsenal that works for everyone: vegetarian, carnivore or pescatarian (whom I usually call “fishavores” since I can never remember the proper term). It’s also handy if said recipe is easy to prepare and uses basic ingredients. It’s freaking fantastic if the same recipe utilizes the zucchini that appears in your CSA box! (Yep, still getting a zucchini or two in my box. Summer is holding on just a bit longer, I guess!)

Zucchini’s delicate flavor can be used in a multitude of ways, from stir-fry to soup to quick bread, but the most versatile dish for this most-prolific veggie is the Zucchini Boat. Follow this basic formula for a traditional dish (adding or removing ingredients as needed to accommodate your guests’ dietary preferences) or get crazy with whatever ingredients you have on hand. In addition to the traditional Zucchini Boat recipe, I’ve include five other variations to play with!

    Sounds good. Might make me a zucchini eater. I may try stuffing some with crumbled sausage & cream cheese.
