Eat Clean in the New Year With This Detox Salad

Looking to start the New Year off on a healthier and cleaner note? Say hello to this Detox Salad from Beaming, which offers plant-based, organic, superfood products that taste good, too. We’re not usually into the whole “detox” thing, but if you overdid the sweets or unhealthy eats over the holidays (or even this past weekend!), this salad will definitely get you feeling better and back on track. Chock full of antioxidants and fiber, it’s exactly what your body needs to detox and rejuvenate!
 

Detox Salad Recipe

Dressing Ingredients
1/4 cup macadamia nuts
1 tablespoon water
1/4 teaspoon lime zest
1 tablespoon fresh lime juice
1/4 teaspoon ground cumin
Pinch of salt
Pinch of cayenne pepper
Salad Ingredients
1 cup broccoli, finely chopped in food processor
1/2 cup diced fennel
1/2 cup diced peeled raw apple
1/4 cup chopped spinach
2 Tbsp toasted sunflower seeds
2 Tbsp currants
small pinch salt and freshly ground black pepper
Directions
1. Wash vegetables. In a food processor, finely chop broccoli and set aside in a salad bowl. Add a small pinch of salt and massage with your fingers for 30 seconds.
2. Wash and dry out food processor and then add macadamia nuts and finely grind them for 30 seconds. Add the remaining ingredients and pulse until creamy; add more water, a 1/2 a teaspoon at a time, to thin out as desired.
3. Transfer the dressing to a bowl. Chop up all the rest of the vegetables in a same bowl as broccoli. Add sunflower seeds and currants. Pour the dressing over the salad and serve.
