Carrots ‘N’ Cake’s Gluten-Free Almond Brownies

They look delicious, right?! Right. And they come from the awesome recipe-creating brain of one of our favorite bloggers, Tina Haupert of Carrots ‘N’ Cake! We love Tina and her fit foodie-ness so much that we recently featured her here, and today we are thrilled to be able to share her delicious recipe for gluten-free brownies. We love everything in this recipe, from the unexpected crunch of the almonds to the gooey chocolate that just screams “sweet tooth”! Enjoy!

Tina Haupert’s Gluten-Free Almond Brownies Recipe

Serves 9
Nutrition: 142 calories per serving
Ingredients
2 tablespoons butter, softened
1/2 cup sugar
1 egg
1/4 cup unsweetened almond milk
1 teaspoon vanilla extract
1 cup almond flour
1/4 cup unsweetened cocoa powder
1/8 teaspoon sea salt
1 teaspoon baking powder
1/4 cup chopped whole natural almonds
1/4 cup dark chocolate chips
More almonds for garnish
Directions
1. Preheat oven to 350 degrees F.
2. Cream together butter and sugar in a large mixing bowl. Blend in egg. Blend in almond milk and vanilla. In another bowl, whisk together almond flour, cocoa powder, sea salt and baking powder. Add to butter mixture and blend just until mixed. Stir in chopped almonds and chocolate chips.
3. Coat an 8”x 8” baking pan with non-sticking cooking spray.
4. Pour batter into prepared pan and spread evenly.
5. Bake for 30 to 35 minutes.
6. Remove from oven and allow to cool slightly before slicing and serving. Garnish with more chopped almonds or with sliced almonds, toasted.
