Watermelon Jalapeno Margarita

At FBE we’ve never met a margarita we didn’t like, and this Watermelon Jalapeno Margarita is no exception! Sweet but with just a bite of heat, we think we may have found the perfect summertime margy.
Research shows significant health benefits linked to drinking fresh watermelon juice, so why not get your daily (okay, maybe not daily) fix of vitamin C and lycopene in a refreshing cocktail?
For this Watermelon Jalapeno Margarita we recommend silver tequila with its subtle scent and flavor of agave, but by all means use whatever you like. Whatever you do, just save those rinds for another seasonal treat, Watermelon Rind Pickles.

Watermelon Jalapeno Margarita Recipe

Watermelon Jalapeno Margarita
Ingredients
8 c cubed watermelon
1 ½ c silver tequila
½ c orange liqueur (Cointreau or Triple Sec)
½ c fresh lime juice
¼ c simple syrup
1 –2 jalapenos, de-seeded and thinly sliced

Puree watermelon, in batches, in a blender or food processor. Pour puree through a strainer. Use a ladle or the back of a large spoon to press the juices through; discard pulp and seeds.

I ended up with just more than six cups of pulpy liquid.


Combine watermelon liquid, tequila and the next four ingredients in a large pitcher. Cover and chill for two hours (longer for a stronger pepper flavor). Serve over ice and garnish with a mixture of salt and chili powder.
