Quinoa Stir-Fry With Vegetables and Chicken
Ah, quinoa — a great source of energizing iron and amino acids to nourish newly toned muscles, and potassium, which can help beat bloat. We always have it on hand in our house and use it frequently in many recipes.
The traditional chicken fried rice recipe is quite delicious, not but too healthy. Therefore, I give you a much healthier twist on the traditional dish that is just as tasty, if not tastier. It’s super simple to make and is great for leftovers for several days after.
Quinoa Stir-Fry with Vegetables and Chicken

Ingredients
- 3 cups cooked quinoa
- 2 tablespoons sesame oil
- 1 (16 ounce) package mixed vegetables, cooked
- 3 green onions, chopped
- 2 eggs, scrambled
- 2 cups chopped cooked chicken
- low sodium soy sauce to taste
Instructions
- Cook quinoa according to package directions. Set aside and keep warm.
- Heat sesame oil in a large sauté pan over high heat. Stir in carrots, peas and onions; cook about 30 seconds.
- Crack in eggs, stirring quickly to scramble eggs with vegetables.
- Stir in cooked quinoa and chicken; cook 5 minutes more.
- Add soy sauce, if desired.
