Easy Healthy Breakfast: Healthy Chef’s Beauty-Boosting Melon Bowl

Need to freshen up your breakfast game? Ooof, I’ve been there. Last week, I made the same smoothie every. single. morning. (And it was delicious every time! But still, I hate getting stuck in a rut when there are so many other awesome options!)
Now, I realize not everyone is as smoothie-obsessed as I am, and a lot of that, I think, has to do with the blender. Maybe you don’t have a high speed blender (which means you’ve got a lot more prep work to do before you get to the good part), or perhaps the noise bothers the folks in your home who are still asleep when you’re ready for breakfast. Or shoot, maybe you just prefer to chew your food. I don’t know your life. But I do know that this easy, healthy breakfast recipe from Australian celebrity chef Teresa Cutter is here to save the day. Erm, morning? You know what I mean.
This Melon Breakfast Bowl isn’t a super strict recipe — you can switch up the type of melon you use, select a different type of yogurt, and toppings? You do you. But you should know that the recipe comes from The Healthy Chef Purely Delicious cookbook, and it’s designed to actually give you a bit of a beauty boost by including ingredients that help protect your skin, keeping it young and fresh. Even at six in the morning.

This is a simple breakfast ideas that packs lots of nutrition. Plus, it can be customized in about a million ways!
Ingredients
  • 1 rockmelon (cantaloupe), cut in half
  • 200 g (7 oz) thick Greek Style yogurt or your choice of natural yogurt
  • 2 tablespoons goji berries
  • 2 tablespoons bee pollen
  • 2 tablespoons pumpkin seeds
  • 2 tablespoons coconut
  • 1 tablespoon cacao nibs (optional)
  • Other ingredients to consider: Any melon works well, like honeydew, although cantaloupe is rich in fiber and has a high water and electrolyte content, which is why it's featured in the recipe. You could also swap the Greek yogurt for a cashew cream or coconut yogurt. Granola or a mixture of nuts, berries and seeds can be used in place of the super food sprinkles. Drizzle with a little raw honey if needed. Mix through ¼ teaspoon Healthy Chef Matcha or 1 tablespoon of Organic Superfood and Protein into the yoghurt before serving.
Instructions
  1. Make a little hollowed space in the middle of your melon.
  2. Fill it with yogurt, then top with your choice of healthy ingredients!
