Grilled Fruit Hobo Packets Make Dessert Easy

You know those fun campfire hobo packets that make dinnertime and clean-up super easy? Well get this: you can do the same damn thing with fruit and have a warm cobbler-like dessert in no time! Say, whaaat?
That’s right. Forget the potatoes, chicken, fish or veggies, and instead create a hobo pack with fresh berries, a sprinkle of sugar and a little cornstarch; toss on the grill, then pour that bubbly, deliciousness over ice cream or vanilla yogurt and dig in.
It’s not fancy, but it doesn’t have to be. Single serving hobo packets create instant portion control (as long as you don’t go nuts on the ice cream), and those with gluten intolerance can enjoy the makings of warm pie à la mode without the crust or the fuss.
Loaded with vitamin C and antioxidants, bite-sized berries are a natural for fruit hobo packets, but any seasonal fruit will work (and so will frozen, if that’s all you’ve got available). Mix and match whatever berries you like, or try rhubarb and strawberry for a sweet but tart combination.
Later this summer give the stone fruits like peaches, nectarines and apricots a turn on the grill as well. They’re a great source of fiber, vitamin A and potassium, plus they make a colorful combo when paired with cherries or blackberries.
When autumn rolls around think apples; choose a tangy, but sweet variety like the Jonagold. Don’t bother with the cornstarch, but do add a dash of cinnamon and a sprinkle of nuts. You can thank me later.



Grilled Fruit Hobo Packs

Ingredients
  • 4 – 12” squares of heavy-duty aluminum foil
  • ½ pound strawberries, halved or quartered if large
  • ½ pound blueberries
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • ¼ cup sugar
  • ¾ teaspoon cornstarch
  • 1 tablespoon unsalted butter, cut into four pieces (optional)
Instructions
  1. Combine the strawberries and blueberries with lemon zest, juice, sugar and cornstarch.
  2. Place in the center of the sheet of foil and dot with butter.
  3. Fold up two sides of the foil and crimp to close.
  4. Fold the other two sides up to seal the hobo pack.
  5. Grill the hobo pack over medium heat for 5 to 10 minutes or until the fruit is sizzling.

    Wow, I didn’t think of even grilling fruit. This feels like an awesome discovery for me. I always thought of fruit as something you eat straight off the fridge (or the tree, if you will) and you’re done. Come to think of it, I’m honestly getting bored of it. This is one great way to switch up my desserts/breakfasts every so often. Got a bunch of apples right now, so that’s what I’ll grill first! 🙂
