There’s something just so satisfying and homey about raisin oatmeal cookies, isn’t there? They just scream home-cooked comfort to me. And I don’t know about you guys, but I like my raisin oatmeal cookies with a lot of cinnamon for a really warm and spicy flavor.
So these Raw Cinnamon Raisin Oatmeal Cookies from Chef Xavier Bonnafous of Southern Pressed Juicery were a must-share recipe. Besides being gluten-free, Paleo, vegan and vegetarian, they’re also delicious and super easy to make. No wonder Southern Pressed Juicery says that these are one of the hottest items on their menu. They’re so cool … they’re hot. Har har!

Raw Cinnamon Raisin Oatmeal Cookies

The cookies feature vanilla extract and agave nectar for sweetness and the use of almonds and coconut oil instead of flour, sugar and butter.
Ingredients
  • 3 cups almonds
  • ½ cup agave nectar
  • 4 teaspoon vanilla extract
  • ½ cup coconut oil
  • 2 tablespoon cinnamon
  • ½ teaspoon sea salt
  • 1 cup raisins
Instructions
  1. Soak raisins in hot water before combining ingredients.
  2. Mix all ingredients together.
  3. Scoop ½ oz scoops at room temperature.
  4. Chill and enjoy!

    So why are these cookies called oatmeal, when there is no oatmeal in them? Go figure. I would think Raisin Almond Cookies would be a better description of the recipe. Anyway, I do use raw oats in cookies and don’t bake them.
