The Best Banana Waffles

Breakfast shouldn’t be something you have to eat — it should be something you look forward to as soon as you wake up. And according to Devyn Sisson, author of the new cookbook Kitchen Intuition, these waffles fully fit that bill!
The ingredients couldn’t be simpler, nor could the instructions. And they’re simple enough to leave you plenty of room to play around and make them your own.

Banana Almond Flour Waffles

This recipe works for two waffles or one big one, depending on your waffle iron. Either way, it's good for you and delicious!
Ingredients
  • 2 unripe bananas (green at the top, but not the whole thing)
  • 2 eggs
  • Handful almond meal (about ¼ to ½ cup) -- the amount of flour will vary depending on the size of the egg and banana.
Instructions
  1. In a large bowl, mash the bananas with a fork, potato masher or your hands. Add the eggs and almond meal to the bowl; mix together. NOTE: batter should be thick, not runny.
  2. Pour batter into a preheated waffle iron and follow the waffle iron instructions for cooking.
Notes
Pair with maple syrup, berries, coconut flakes, cacao nibs, cinnamon, almond butter, coconut cream, or all of the above to make them your own!
