Breakfast shouldn’t be something you have to eat — it should be something you look forward to as soon as you wake up. And according to Devyn Sisson, author of the new cookbook Kitchen Intuition, these waffles fully fit that bill!
The ingredients couldn’t be simpler, nor could the instructions. And they’re simple enough to leave you plenty of room to play around and make them your own.
- 2 unripe bananas (green at the top, but not the whole thing)
- 2 eggs
- Handful almond meal (about ¼ to ½ cup) -- the amount of flour will vary depending on the size of the egg and banana.
- In a large bowl, mash the bananas with a fork, potato masher or your hands. Add the eggs and almond meal to the bowl; mix together. NOTE: batter should be thick, not runny.
- Pour batter into a preheated waffle iron and follow the waffle iron instructions for cooking.
What are your favorite waffle toppings? I just don’t think you can beat fresh fruit and a little real maple syrup. —Kristen
