Honey Cake Recipe

1/2 c of honey
1/2 c of Strega wine (or any sweet white wine, but Strega is best)
5 egg yolks
7 egg whites
1½ tsp of salt
1 tbsp of grated orange peel
1/2 c plus 2 tablespoons olive oil
1 c whole wheat flour
1/2 tsp each of cinnamon, cloves and nutmeg

1. Preheat oven to 375 degrees.

2. Whisk egg yolks with honey for five minutes. Add orange peel. Sift flour with salt and spices. Gradually stir in egg yolks and honey. Add wine and olive oil, stirring constantly as you add small amounts. Beat the egg whites until stiff and fold into batter.

3. Line the bottom of an 8-inch spring-form pan with oiled parchment or a brown paper bag cut to size. Oil the pan and paper well. Pour batter into pan and bake for 20 minutes.

4. Turn oven off and let cake sit for 10 minutes. Remove cake from oven. Turn over and detach from spring pan carefully. Enjoy!

  1. My favorite Valentine’s Day treat is a tie between fresh (dark!) chocolate covered strawberries (for those antioxidants) and a glass of dry champagne with fresh pomegranate seeds (again powerful antioxidants and I just love how the pretty seeds bounce around in the bubbles ;))

  2. 😡 Ah yes, every year that V-Day comes around I have flash backs of my very favorite romantic skunk ; Pepe Le Pew.

Of course, my all time heart melting Valentine’s Day treat is eating those tiny chocolates out of the shiny heart shaped box 😉

  3. I would really enjoy cheesecake with dark chocolate and strawberries, but maybe prepped in a wineglass for romantic look and portion control.

  4. I’ve always liked those no-bake cookies made with oats and chocolate. I use low fat cocoa to make it healthier but the oats help too. Happy Valentine’s Day!

  5. My favorite Valentines treat is a good glass of wine and some sushi. Strange I know. A really good dark chocolate covered strawberry is always good too!

  6. Oh, my favorite valentine’s treat is to make fresh, homemade chocolate covered strawberries.

Very easy and simply delish. Perfect for getting “in the mood” 😉
