Robert Irvine Shares His Carrot Vinaigrette for Eye Health, Workout Plan—and Giveaway!

He is clearly doing something right in the eating-right and working-out department, and after spending a couple of weeks reading his new book Impossible to Easy: 111 Delicious Recipes to Help You Put Great Meals on the Table Every Day, I know that he is a GENIUS in the kitchen. I tried his recipe for Citrus-Braised Chicken Breasts With Sweet Roasted Garlic (p. 136, if you have the book—I skipped the tart part to make it gluten-free), and it was amazeballs. It’s a great guide from going from pretty good home cook to a rockin’ amazin’ your-friends-will-wonder-if-you’ve-been-to-culinary-school cook.
So, when we had the chance to ask Robert a few questions about eye health, per his work with Transitions on this campaign, we were so game! And, yep, from Robert’s answers, he’s just a cool dude. A really strong, cool dude. And his idea for a carrot vinaigrette? Oh, YES, PLEASE. Sounds like carrot heaven. I will so be trying that.

He only lifts light weights but does high rep counts? Can you imagine if he LIFTED HEAVY? Oh, my. Love him!
