Veggie Grilling 101: Avocados on the Half Shell Recipe
As we discussed yesterday, this week we’re bringing you a special series of posts called Veggie-Grilling 101, so that you can become a healthy master of the grill. For the veggie-grilling novice, today we are going to start with a simple recipe for grilled avocados courtesy of the California Avocado Commission. Pair these with spicy chicken or shrimp, serve as your side salad and impress the heck out of your neighbors!
Start with two ripe but firm avocados, cut in half and remove the seed.
Drizzle with 2 tablespoons of fresh lemon or lime juice, and brush lightly with 1 1/2 tablespoons of olive oil.
Gently place cut side down on grill over a medium flame for three to five minutes to warm and create those much sought after grill marks.
Remove from the grill and season with salt to taste or fill with fresh tomato or mango salsa and dig in with a spoon. Mexican beer optional, but recommended.
