Breakfast for Dessert

When I was up in Minneapolis visiting General Mills, I learned a lot of things. And one of them was that a lot of people eat cereal for dessert. I mean, I know people eat Chex Mix and sometimes I’ll snack on low-sugar high-protein cereal during the day, but it’s never really dawned on me to eat it as an actual treat. I’ve always stayed away from the higher sugar cereals because sugar and I don’t get along in the a.m. (leaves me cranky!), but at night? As a true treat? Well, my little wheels were turning. During my visit up north, I got to try Vanilla Chex (gluten-free, too!) and was smitten. So it was an obvious cereal-as-dessert place to start.

And then I thought, why just have it with my regular unsweetened coconut milk? Why not pair it with THIS instead?

And, OMG. It was cereal dessert heaven. General Mills also sent me this cool little Cereal Lovers Obol (deserving of a Healthy Obsession in and of itself), which was the perfect receptacle for my new deliciousness. The two little separate sections allow you to have as little — or as much — sogginess as you want. Perfection.

With vanilla-chocolate sweetness and not a lot of calories, it’s my new favorite evening treat. It’s light and cool for summer and totally satisfies my sweet tooth. I can’t wait to try other flavors of gluten-free Chex with other Silk varieties, too. Apple Cinnamon Chex with Silk Pure Almond Light? Cinnamon Chex with Silk Iced Latte (not too late, as there is caffeine in it)? Oh, heck to the yes.
