Plenty of studies have shown that “eating the rainbow” — which is actually less about multi-colored candies and more about eating produce with a wide variety of colors — is a great way to eat for better health. And the more color — red, blue, purple, orange, yellow, green — you can get in your daily eats, the better.
There have been whole books written on the subject, but basically what gives most fruit and vegetables their distinctive colors isn’t just for looks — it’s powerful compounds and antioxidants that have huge health benefits. From protecting us against cancer to boosting the immune system to even helping our brain function, each color represents a special nutritional powerhouse just waiting for you to nibble it up and reap the healthy benefits! To get the most of eating the rainbow, be sure to aim for at least one serving of each of these colors most days of the week.
