Make It This Weekend: Grilled Watermelon Recipe

It’s a holiday weekend and you know what that means — it’s time to fire up the barbie! We’ve shown you how to grill veggies and avocados, and today — with the help of George Duran, author of Take this Dish and Twist It and host of TLC’s “Ultimate Cake Off” on behalf of ConAgra Foods — we’re going to show you how to make the easiest, tastiest and healthiest dessert ever: grilled watermelon!
According to George, this grilled watermelon recipe is THE dish for summer. Chop it up into smaller cubes and toss with some feta cheese for a super healthy side dish or snack, or top the grilled watermelon with Hunt’s diced tomatoes and drizzle olive oil and balsamic vinegar (and some mint or basil for looks) for another tasty option. Or, you know, just eat the grilled watermelon as it is as dessert! This grilled watermelon recipe makes eight to 12 servings, depending on the size of the watermelon, so it’s great for a crowd no matter how you serve it this summer!

Grilled Watermelon Recipe

Ingredients
1 medium seedless watermelon
Sea salt
Olive oil
Directions
1. Cut the melon lengthwise, and then slice it into 1 1/4-inch thick wedges.
2. Salt the watermelon and allow it to rest on a wire rack for 20 minutes. Rinse the salt off all the surfaces of the melon pieces and firmly pat them dry with clean paper towels.
3. Brush the watermelon with the olive oil. Place on a preheated grill over medium-high heat and cook for 3 minutes on each side.
