The Warm Veggie Snack You’ll Crave


Snacking on carrot sticks isn’t exactly a revolutionary concept in healthy eating — and even if you crave raw carrots normally, cold winter weather might have you wanting something warm. And that’s where this recipe for carrot fries comes in!

It’s quick, it’s easy, it’s satisfying — and it’s super good for you!

Carrot Fries

Serves 5
Total time: 15 minutes

INGREDIENTS
1 pound fresh carrots
2 teaspoons oil (coconut or olive oil)
1/2 teaspoon salt

DIRECTIONS

  1. Preheat oven to 450°F.
  2. Peel carrots into thick slices or cut into strips of desired thickness.
  3. Toss slices in oil and salt.
  4. Bake at 450 for 10-12 minutes (or until desired crispiness is achieved).

    I’m allergic to carrots but this sounds like an awesome idea to try with other root vegetables. I’m thinking about trying this with turnips later this week.
