Strawberry ice cream, strawberry cake, strawberry smoothies—strawberries get a lot of recipe love this time of year since they’re ripe, in season and juicier than ever.
Well, I say let’s keep that strawberry love going with this super simple recipe for strawberry agua fresca that screams summer and takes just 5 minutes to prepare. What do you say? Alright, let’s do this.
If you’ve never tried agua fresca—which means “fresh waters” in Spanish—it’s simply fruit pureed and sweetened and combined with water. That’s it! It’s pretty amazing, simple and refreshing, and the flavor combination options are endless.
Pineapple, mango, cucumber-mint, strawberry-lime— these are just a few of the flavors we tested in our kitchen. But there’s an abundance of must-try flavors out there, like watermelon, guava and cantaloupe.
I have my eyes set on pineapple-cilantro next. It’s a flavor combo I simply cannot wait to test out once warmer temperatures are here to stay.
I can’t decide if I liked the pineapple or strawberry-lime more, but they both hold a special place in my heart. At first, I thought lime and strawberry might be an odd pairing, but the two totally jive together! The sweetness of the strawberry balances the tart lime perfectly, and it has me forgetting strawberry and kiwi were ever friends. I mean, strawberry-kiwi, who?

This agua fresca recipe is made with stevia to keep the sugar count down, but if you don’t have it on hand simply sub in honey, sugar or another natural sweetener. If you aren’t the sweet tooth type, you might be able to forgo it altogether.
As for uses, the possibilities are endless! Breakfast, brunch, lunch, dinner, a light after-dinner dessert—it’s really appropriate for any setting. I think adding a little liquor would be a nice touch for summer cookouts and cocktail parties, as well. Dream big! Just don’t miss out on this amazing combination. In our opinion, it’s agua fresca at its finest.

Strawberry Lime Agua Fresca Recipe

Strawberry-Lime-Agua-Fresca-2-full
Servings: Yields four, 3/4-cup servings
Ingredients
1 16-ounce container strawberries, rinsed and hulled (~2.5 cups)
juice of one lime
3 c water, divided
1/4 packet (~1/8 tsp) non-bitter stevia (or sub honey, sugar or Truvia)
Directions
1. Add strawberries, lime juice and 1 cup water to a blender and blend until well combined. Pour the mixture over a fine mesh strainer or cheesecloth over a mixing bowl. Using a rubber spatula, press the pulp down until all of the liquid has seeped through, being sure to knock and sweep the bottom to get every last drop.
2. Transfer liquid to a large pitcher and add 1 to 2 cups more water (depending on preferred concentration). Add stevia or sweetener of choice and whisk. Taste and adjust flavor as needed.
3. Chill and stir once more before serving. Alternatively, add ice cubes, garnish with lime and strawberry and serve your agua fresca immediately!
