2014 Noshies: Recipes

Best quick-and-easy gluten-free Thai meal: Papaya, Mango and Shrimp Lettuce Wraps. Seriously, the mix of the savory and slightly sweet Gluten-Free Thai Peanut Sauce with the spice is sooo good. And the refreshing crunch of the cucumbers with the sweetness and fruity flavor of the papaya and mango was perfection. —Jenn
The best no-worries dinner: Hakuna Matata Frittata. Once you’ve mastered the frittata you’ll have a no worries dinner that you can turn to for the rest of your meal-planning days. —Karen
Best and most inventive pizza crust recipe: Cauliflower Pizza Crust. My traditional pizza lover, Bill, gave this cauliflower pizza crust a thumbs-up. Be warned though, it does not make a very big pie — the two of us almost devoured the whole thing! —Karen
Best soup (especially for the holidays!): Christmas Cranberry Soup. Knowing that your mind is elsewhere this time of year, one of the FBE elves is sending you a gift: a low-fat, gluten-free, vegetarian Christmas Cranberry Soup recipe. It’s perfect for the holidays, pairs well with pork, poultry or beef, and can be prepared ahead of time. —Karen
Best meal for runners: Sweet-and-Salty Pistachio-Crusted Salmon. I’ve been super into pistachios lately, so this recipe kind of just popped into my brain. And I’m lucky it turned out tasty. In fact, my husband kind of flipped over how good it is — the pistachio topping is pretty dang addictive! And the best part is that it is ridiculously easy and quick to make! —Jenn
Best side dish recipe: Ginger Curry Roasted Cauliflower. I found this Ginger Curry Roasted Cauliflower from Peanut Butter Fingers last spring, and it didn’t take me long to try it out. Never has there been a healthy side dish that my husband devoured quite so quickly — I had to move fast to make sure I got my share, which was shocking given that he swears he’s not a fan of curry. It’s even won praise from friends who swear they DO NOT LIKE cauliflower, which is just about as high as praise can come! —Kristen
Best summer drink: Watermelon Agua Fresca. Agua frescas, a popular drink of pureed fruit, sugar and water, are served all over Mexico, and for good reason — they’re delicious and refreshing! Watermelon agua fresca is a quick beverage to make in large batches. —Susan
Best way to drink like a Wisconsinite: The Brandy Old-Fashioned Sweet. If you’re not from Wisconsin, I’m sorry. You’ve been deprived of so much by not living in the Badger State, the greatest of which is the brandy old-fashioned. Perhaps you can’t call yourself a ‘Sconnie, but you can certainly drink like one tonight with this recipe. —Susan
Best chocolate vegan dessert: Peppermint Patties. You guys, when I bit into my peppermint patty, I got the sensation. —Susan

Best donut recipe: Lemon Fonuts. You say donut; I say fonut. —Karen
Best recipe for four-legged friends: Spent-Grain Dog Treats. It is estimated that people spend between $20 to $60 bucks a month to feed their canine companions, so why not cut some of that cost by making your own spent grain dog biscuits? —Karen
