Welcome to the Fit Bottomed Eats Free Meal Planning Challenge!

Cooking — and eating — healthfully sometimes seems like a challenge, even for those of us who know our way around the kitchen. It’s not so much that we don’t know, say, what to do with kale or how to cook with quinoa. It’s more that eating well doesn’t just require cooking skills — it also involves some planning.
Meal planning can be intimidating, but we don’t think it has to be. In fact, we want to take all the scariness out of it and maybe even make it a little bit fun for you. And us. Because, umm, there are only so many meals each week that should consist of a last-minute big ass salad, delicious as it might be.
So! we’d like to introduce … drumroll, please … the Fit Bottomed Eats Free Meal Planning Challenge! Every couple of weeks, we’ll share a challenge on our social media channels (Facebook, Instagram, Twitter and Google+) with a different challenge. And don’t worry — it’s not that you have to plan out every single meal, every single day (although if you want to do that, fist bumps to you!).

Our challenges will be more along the lines of eating a vegetarian or Paleo meal three nights out of the week, bringing your lunch to work each day instead of ordering in, trying a new recipe using a seasonal ingredient (and don’t worry — we’ll totally share recipes to inspire you), or maybe planning two dinners that will provide you with killer leftovers for a second meal. You can handle that, right? Sweet! So can we!

The #FitBottomedEats Free Meal Planning Challenge

Your free meal planning challenge, should you choose to accept it, for this week is to create a big ass salad (either for a main dish or as a side — your call) and include an ingredient you’ve been curious about but have never tried. Hit the grocery store and check out some funky fruits and vegetables. Remember, ingredients like watermelon and mango can add a sweet kick to a spicy or savory salad, and can even be whipped up into a fab dressing.
Once you’ve created your edible masterpiece, tell us about it on social media, using the hashtag #FitBottomedEats. We can’t wait to see what you come up with!
