5 Healthy Foods We Thought We Hated But Now Love: Part 2
I’ve got no beef with cucumbers or vinegar, so I’ve yet to understand my distaste for pickles. It doesn’t matter if it is a sweet baby gherkin, the bread-and-butter variety or a crunchy Kosher dill spear — somewhere along the line they just got dumped into my hate category and I often wish that wasn’t true.
Pickles have a fun, tasty reputation, are low in calories without a trace of fat and even offer probiotic benefits, but no matter how many times I’ve tried I either end up spitting it out or dutifully swallowing it with no enjoyment.
My neighbor’s batch of watermelon rind pickles changed all of that. Tart and sweet with a whiff of summer, it’s easy to snack away on a whole jar. No, they aren’t traditional cucumber pickles, but it gives me hope that my pickle-hating days are coming to an end.
