Healthy cooking methods combined with a prolific use of vegetables and a palate of interesting flavors brought foods from Morocco, Turkey and Israel to the forefront in 2013.
Expect the trend to continue in 2014 but with local chefs now incorporating the flavors of the Mid East into their own regional dish. Za’atar, a spicy, versatile herb blend, will regularly appear sprinkled on salads, baked potatoes, pizza — you name it — to give your food — and your mental acuity — a little kick. And make room on the condiment shelf for a shaker of sumac, an essential in Mid Eastern cuisine. With its tangy, citrusy flavor, it goes with almost everything.

    I would like to try new spices like Za’atar. Not into meats, alcohol, or sugar of any kind (plain yogurt is ok). I’ll try to hunt down the Za’atar at my local international market. Thanks!
