Formerly found only on the menus at haute cuisine restaurants, pigeon will make an appearance on many small-scale farm-to-table restaurants. Lean, easily digestible and rich in protein, the pigeon, or squab as it is known in culinary terms, has long been considered a delicacy.
Young pigeon meat is suitable for roasting, grilling or searing, is tender and tastes much like the dark meat of a chicken.

    I would like to try new spices like Za’atar. Not into meats, alcohol, or sugar of any kind (plain yogurt is ok). I’ll try to hunt down the Za’atar at my local international market. Thanks!
