Straight from the middle ages, that favorite inebriant of dashing romance novel rogues, mead, or wine made from honey, is making a comeback. Possibly the oldest fermented beverage in the world, mead was historically made in areas where grapes were scarce. This fragrant drink most resembles a Riesling and can range from very sweet to quite dry. Like traditional wine, the flavor varies greatly depending on the ingredient source and the fermentation process.
While medieval tavern dwellers were probably more interested in “getting their mead on” than in a sophistication of flavors, in an effort to appeal to the modern palate, today’s mead producers focus on the essence of the flower from which the honey is derived.
Like grape wine, mead is naturally gluten-free. It may or may not be effervescent and with the addition of other fruits and spices can take on a myriad of flavors.

    I would like to try new spices like Za’atar. Not into meats, alcohol, or sugar of any kind (plain yogurt is ok). I’ll try to hunt down the Za’atar at my local international market. Thanks!
