4. Grilled. We tried grilled fish once, too, and it’s so much more difficult to grill fish unless it’s a sturdy variety. The ones that are more delicate are less favorable to grill. So stick to something like salmon or a cod that is much more dense and firm and will probably hold up better than, say, a tilapia or a mahi mahi, which is what we attempted to use. Mahi mahi is similar to tilapia in knowing when it’s done. Make sure it’s flaky and opaque. My hubby cooked this for us on the grill—he kept it on a higher heat because our grill is ancient and doesn’t heat well, however, I would cook it at whatever heat works for your grill. Lower- to medium heat would be best if you’re afraid of burning it.
